Fruit-Topped Granola Yogurt Cups

The Super Bowl is just a few short weeks away and I know everybody is looking for the best appetizers to serve at their party. Of course, chicken wings, meatballs, dips, chips, and mini sandwiches made the cut. If you want something a little different that your guests will love (and not loaded with calories) make these bite-sized granola bites. Enjoy!

Fruit-Topped Granola Yogurt Cups
Ingredients
  1. 1 ½ Cups Rolled Oats
  2. 1 Cup Wheat Bran Cereal
  3. ½ Cup Brown Sugar, Packed
  4. 1 Tbsp. Cinnamon
  5. ¼ Tsp. Salt
  6. ¾ Cup Honey
  7. 1 Tsp. Vanilla Extract
  8. 2 ¼ Cups Low-fat Vanilla Yogurt
  9. ½ Cup Fruit, Chopped Into Small Pieces (Your choice)
Instructions
  1. Coat mini muffin pan with cooking spray.
  2. Set aside.
  3. In large bowl, combine oats and bran.
  4. In a saucepan over low-medium heat, mix sugar, cinnamon, salt, honey, and extract.
  5. Stir mixture until it comes to a boil, then immediately remove from heat.
  6. Pour mixture over the oats and bran.
  7. Mix until oats and bran are completely coated.
  8. Let slightly cool.
  9. Using a rounded tablespoon, scoop mixture into greased compartments of muffin pan.
  10. Grease the back of tablespoon and use to firmly press mixture into pan.
  11. Let mixture set for 30 minutes.
  12. Remove cups from pan and place onto serving platter.
  13. Scoop one tbsp. of yogurt into each cup.
  14. Top each cup with 1-2 small pieces of fruit.
Notes
  1. Note: One serving is two bite-size pieces.
